Butternut Squash Soup


Recipe Makes: 4-6 servings

Prep Time: 15 minutes

Cook Time: 1 hour 15 minutes

Total Time: 1 hour 30 minutes

INGREDIENTS:

1 medium to large butternut squash

1 onion

2-3 carrots

Thyme; to taste

Rosemary; to taste

32 oz chicken broth

Salt and pepper; to taste

2 tbsp olive oil

DIRECTIONS:

  1. Preheat the oven to 400F. Dice the vegetables and toss them on to a baking sheet.
  2. Drizzle with olive oil and add the seasoning to taste. Bake at 400F for 30-40 minutes, or until the vegetables are soft.
  3. Blend the softened vegetables and add them to a pot. Then add in chicken broth. Simmer for 15 minutes. Pour into bowls and drizzle on some heavy cream. Enjoy.

STEP BY STEP INSTRUCTIONS:
